Cucumbers are tasty vegetables that are great to eat all year round!
They are low in calories but definitely not lacking in flavor! They can be added to so many great salad options. And of course- they come with plenty of nutrition also!
Cucumbers are made up of about 96% water– so it makes sense they are so mouth watering! They are rich in antioxidants, magnesium, potassium, and vitamins C & K.
They are also known to help support weight loss, lower blood sugar levels and promote regularity.
Cucumbers are a versatile veggie too. From smoothies, to dips, sauces to even just adding to water to give it some flavor!
And with summer coming- what better way to kick off the season than with a creamy cucumber salad?
With this savory recipe- you will be the hit of any BBQ you attend this summer!
Let’s get started!
First- let’s talk about the dressing!
What you will need to make this creamy dressing is:
- ¾ cup sour cream (feel free to use reduced fat or even substitute with greek yogurt)
- ½ tbsp fresh lemon juice from 1/2 small lemon (you can also use store bought lemon juice)
- Hint of vinegar
- 2 small pressed garlic cloves
- ½ tsp sea salt and a pinch of black pepper
- Dash of fresh dill
To mix it-stir the sour cream, vinegar, lemon, garlic and dill into a small mixing bowl. And of course- don’t forget the salt and pepper for a bit of added taste.
Once all stirred- set it aside and move onto chopping up those cucumbers!
English cucumbers work best but of course- you can use whatever ones you prefer!
Peel 3 cucumbers and then slice them in half (can cut smaller if you want smaller pieces as well). If seedy- you may want to cut out some of them to avoid the dressing becoming too watery!
You can also dice up some onion for flavor for the salad as well. And for even more flavor- try adding some feta cheese! Place them in a large mixing bowl.
Then- pour the dressing over the cucumbers and onions and stir until well coated. For extra flavor- feel free to garnish the top with some more dill.
Refrigerate for at least 2 hours to let the flavors soak in. Try to serve after 2-3 hours so the salad is at its freshest.
This salad is a great side for kabobs, burger or even a wrap!
